What would be the difference between hitting your keg with set-it forget it and just hitting it with CO2 purging the O2 out and letting them both sit for 3-4 weeks. I understand that one will be carbed and ready to drink but do they both still age in the keg and get better with time. Asking cause I kegged a real ale tonight, I brewed it on 1/1/11, its FG was 1040. I tasted it and it's was "green" I guess. Still taste like a beer with a whiskey chaser. Figure it needs more time. If it's carbing, will it still age the same as the above mentioned. Thanks for any input fellas

You can just hit it with CO2 and let it sit. It will be fine. Technically at room temp it will age faster than if it was cold.
