Adjusting NB Honey Kolsch Hybrid extract kit

Any ideas on substituting the supplied clover honey with other kinds of local such as thistle or orange blossom. Also if I add more than the one lb what affects on final product. Can I add an adjunct like honey at different times like hops or will it just increase abv.

If you want more honey flavor I would recommend not boiling the honey at all. You can mix it directly to the chilled wort or you can stir it in while the wort is chilling if you want.

If I add more than the 1# in the recipe will it great affect the alcohol level or the yeast.
