Adding yeast to fresh pressed apples?

Quick question, I have a apple tree I am going to pull the apples from and press for cider. If I wash the apples real good prior to pressing or juicing, that should wash all the wild yeast off and allow me to pitch my own yeast? Right..

Well yes but you can pitch on top of those yeasts as well. I just made a cider with tree picked and pressed apples that were not washed. Came out tasting pretty decent other than it needs just a hint of sweetness.

Awesome thank you. I am going to use the Jack Le Lane juicer to extract....
 
That would work. What I have seen is people let that sit for a few days before using it. I dont know why but hey its something to learn! lol. What yeast are you planning on using? Oh and are you only planning on using a single apple variety?

I have some Windsor yeast harvested from some pumpkin ale I just brewed, that might finish a little sweater. I just bottled a 5 gallon batch and I used the wyeast cider strain and it is delicious. I did 5 gallons of Langers apple juice from Food Max and added 2 lbs of brown sugar. Racked into secondary 3 weeks ago. Finished at 1.012. I had a hard time waiting, I wanted to drink it...

So far i was thinking just my home grown apples. It just depends on the juice yielded. I will go for a full 5 gallon batch. I will add what ever i can get a hold of locally. If I am waiting 4-5 plus weeks I want a lot of cider to share with friends...

Awesome! Wish I had time to brew at the moment. That is why I turned to cider lol. Pitch and walk away. I used the English Dry from Whitelabs 775 I believe and it fermented extremely quick. Will be trying the Lalvin 1118 next see how that turns out. Add anything in the secondary? Spices what not? I am thinking about trying cinnamon after a secondary rack. Havent tried it before.

The batch mentioned above was my first full 5 gallon and it was simple and straight forward. So for the next batch I might spice it up in the secondary a bit. Thanks for the reminder... I was even toying with the idea of a cyser.....mead with cider...
 
Just had Zombie Killer from B. Nektar. Awesome Cherry Cyser. And sure thing. With winter coming up cinnamon and nutmeg in a cider would probably be pretty awesome.

I will have to try the Zombie....I'll keep you posted on the cider , I got the green light to pull the apples...ttyl..
