Got the stout changed over today to the second tank today. I was wondering is there a wrong time to add the yeast? This has nothing to do with me changing it over I just was wondering if wort tempature really effects the yeast and in what way. Does it take longer to kick in if you add it when it is over 90 degress or does it take less time? I know that 70 degress is ideal for when to add the yeast but what does it do if you add to early when the wort is warmer, or how about it for some unknown reason you are brewing beer at the north pole and you can't keep the beer warm enough? How does it effect the end result? How can you save the batch if you add to soon or to late? I really wish I would have paid more attintion in science class.

Temperature has everything to do with how it turns out.
Beer fermented at a low temp will taste different to the same beer fermented at high temp.

To low and it stops, to high and it'll taste funk or kill the yeast. You need to stick to the recommended temps or read up so you can make your own decisions.
 
It feels like i am at the poles!! I cooled my wort today in the sink with cold water! I followed the directions and they said if you can get the wort temp down to about 100 F in 20 mins you are going a pritty good job....I must have done great because I got it below 60 F in 20min!!! I pitched at a little above 60 F.

I figured that it will be slow until the work temp comes up... our house sits about 72 F normaly!
