Hey guys, I am making a specialty lager. All grain mash. Ingredients as follow.

8.5 lbs of Pilsner (2 row) Bel
2 lbs of Caramel Malt 20L
1 lb of light brown sugar

1.5 oz Saaz for 60 minutes
0.5 oz Saaz for 5 minutes

Additives
Irish moss
lactic acid

10 lbs of puree peaches in secondary

It has been 3 weeks into secondary and I gave it a taste. I am extremely happy with how it is turning out so far. My thoughts now are maybe to give it a bit more complexity by adding cinnamon or/and vanilla. The mouth feel is pretty good but I am considering adding dextrin too. I plan on bottling in about a week. Thoughts??

I have a pumpkin ale in primary right now and was thinking of adding cinnamon to secondary. What would you add, seasoning or whole cinnamon sticks?

I was thinking cinnamon stick just for some flavoring. If I wanted more of a cinnamon kick I would ground up the stick first.
