Hello!

I would like to know if anyone has ever added rum or any liquor to the wort during mash or boil. I want to capture the essence of rum in one of my beers.

How would this affect the wort if added during mash or boil?

You'd probably get better results adding it after fermentation... The boil will probably mess up the aromatics and flavor elements you're trying to capture...

I dunno, though. Never tried it.

Give it a go and let us know how it went!

I'd say go very easy on adding alcohol. From what I've read, about a cup to a 5 gallon batch is plenty. I added a quart of bourbon to a 5 gallon batch of Porter and let it condition for a few months. Far too strong to drink, tasted like drinking straight bourbon except it was about 5.2%.

Save your rum for bottling day. Get a sample of the beer and split it int a few cups. Dose each cu0 at different levels and taste them. Working metric to make it easy your 5 gal batch is about 20liters. A liter of rum would be like adding 5ml to 100ml sample. So maybe try 1ml in 100 ml 3ml in 100ml and 5ml in 100ml. Which do you like best? Do that. Maybe do a little less than the one you think you like best because yo will need to live with 5 gallons of the stuff...

My 2¢ - don't cross the streams.

I like a rum chaser sometimes with a Porter - but I don't get adding liquor to beer in the bottle.

Try it you might like it. A little splash in a beer can be fun and exciting. And thats another option too! Buy the most expensive stuff you can afford and or maybe a few different small bottles and splash them as you go. I like the flexibility in taste and flavor. All of a sudden I'm reminded about how much I love red wine in some beers.

Definitely don't waste spirits pre-fermentation, pretty much everything will be lost to heat and CO2-scrubbing.
fwiw, I use rum to soak cocoa nibs for a week then dump the whole thing in my chocolate stout a few days before kegging...

Cheers!

I would add rum at any point after the boil. directly into primary would work just great.

You need to be careful of the alc% too. You'd have to use quite a bit, but if your doing pre fermentation the alcohol could kill some of the yeast in areas that were not stirred evenly. Also if your priming with sugar to carb, you're relying on the yeast to carb the bottles, if you put too much in each bottle, same result. Having said that, I put about a half shot of Whisky in each bottle of some of my whiskey barrel stouts, and it's great.
