Sure you can. Keep in mind a few things...
- Honey will not add sweetness, since most of its carbs will ferment out.
- Honey will add ABV and make a thinner beer compared to an all malt beer of similar ABV. If you don't want that, consider cutting back on the malt extract and adding something like maltodextrin or lactose (both non-fermentable) to compensate for the impact of the honey.
- Honey aromatics are pretty volatile. The later you add the honey, the more flavor and aroma will be retained.
