Getting ready to start a new batch this week and was wondering if anyone had any thoughts about adding oats to my wort as it cooks for more flavor.
 
they do need to be mashed. that's easy tho, add some 2 row or 6 row base malt to your steeping grains, same amount of 2 row as you have oats, 'steep' between 150-155 (important) for 30-45 mins and that should do the trick and convert the oats.
 
Also if by as it cooks you mean toss them in your boil kettle, all you will get is starch. I wouldn't add any grain by tossing it in the boil kettle.
 
What are you brewing? That makes a big difference as well. Why don't you mini mash with oat flakes.
