Am in the process of reading through Palmers book, and I notice he reccommends adding some of the extract in an extract brew near the end of the boil rather that at the start per most directions. Has anyone in here done this? How did it make it different?

Just about everyone on here has....there's a ton of threads on it....look for Late Extract Addition.

Here's a few to get you started, and each will have a "similarthreads" box below to point you further.

It's pretty much accepted these days as the best way to brew with exract.

I did this one the last batch I made. The SWMBO wanted something she would like a bit more than the beers I tipically brew so we made an extract batch.

I added the DME at the last 15 min.
The big thing to watch out for when your doing this is hop utilization...Extract and Malt make hops less effective in the boil, so if your boiling for 45 minutes without any extract your finished beer will be considerably more hoppy
I punched the numbers in beersmith and it told me the correct amount of hops to use in a Late extract addition.
I dont know how to calculate it, but Beersmith has a free trial on their website www.beersmith.com

I always add the majority of my extract at flameout. Since I've started doing this, I've noticed a cleaner taste, better body and mouthfeel, and I no longer have the caramel taste that made my beers seem "off."

Also, I am able to get much lighter-colored beers now.

I don't do full boils, but there's several threads that say with a full boil you don't need to add the extract late in the boil.

I'm not sure I'd say it's CONSIDERABLY more hoppy. . . maybe drop a quarter of an ounce from the recipe, if that.

your right, "considerably" probably wasnt the right word to use. When I had Punched it in beersmith it was about a 10 IBU jump when I selected Late DME Addition

I do 3 gallon boil with 3 lbs of extract and then at the end I add the rest of the DME or LME for the recipe. Seems good!

I occasionally still do extract batches for demonstrations and other reasons at times. After I started adding 1/2 or more extract near the end of the boil I noticed less of a "mineral" taste. Basically the proteins are already well developed in extract and additional boiling can cause minor flaws in taste. That being said the fresher the extract the better for sure.
