Added Campden Tablets still began fermentation??

So picked up 12 gallons of raw cider on Saturday and added 5 crushed campden tablets into each carboy waited 24 hours, added pectic enzyme 24 hrs ago and when I got home just now it appears both have begun fermenting??? So I just pitched my WLP755 wtf... Campden tablets were from last year and have been sitting in a zip lock in a cabinet since last October.
 
camden will kill of most bacteria and wild yeast but it is not 100%

I've had that happen several times making perry from pears we processed.
 
Added sulfites Saturday morning around 9am
Added pectic enzyme around 5pm Sunday so roughly 32 hours after sulfites
Pitched yeast at 6pm yesterday
 
You probably had quite a bit of fermentation with the wild yeast.

How did it smell when you pitched the yeast?
 
Like juice. One thing that was interesting was gravity was the same 1.054 yet there was obvious signs of fermentation ie krausen and activity in the airlock
