Add Grain to Hot Water or Cold

I've only done a few all grain batches so far but had a question regarding the process.

I have a stainless 42 qt. polarwear stock pot with valve and thermometer for my MLT, so I'm not using a cooler.

Is it better to add the grain to the water, then heat it. Or heat the water first, then add the grain?
 
Typically with indirect heat applications you would add the water slowly to the grain to gradually bring the grain to temp over several minutes while doughing in.

With direct heat I'm guessing most folks get it close to temp then add the grain. One would think that if you added the grain to cold water you'd have conversions taking place at several different temps as it warmed.

Like I said though, I use a rubbermaid cooler so I'm no expert on the subject.

You will, and some people feel that this is desireable.
