Activity in the bottle?

Should you notice anything going on after bottling? Should there be a layer of foam if it's carbonating properly?
 
Nope. The only thing you'll see is the yeast settling to the bottom after it has completed conditioning, and even that may take holding it up to a light.

Foam only occurs when the CO2 bubbles out of solution. Since a bottle is a sealed system, the CO2 stays dissolved until you open it :D

If you are using plastic soda bottles, the only thing you will notice is the bottles getting hard as a rock between 10-14 days. If you are using glass bottles, just let them sit for 2 weeks, refrigerate one and crack it open, if it foams and it is carbonated, you're good. otherwise, leave the beer alone.
 
I never noticed anything happening in the glass bottles, I did one plastic just to feel where the processes was at. It worked out because I realized that I put to much priming sugar in when the bottle was hard and looking like it was about to explode. At that point I popped a glass one to taste and make sure.
