Acid? Added after done

Will the wine taste the same if I add the acid after FG is reached? I didn't have any when I started my batch!

Wineries usually adjust acidity after fermentation and MLF if they are doing it, because the acidity gets lower during fermentation.

During primary the pH would rise eg. from 3.4 to 3.5, not a huge rise but significant. Not sure about TA, maybe drop 0.05. The drop from MLF is greater, maybe 0.15 or 0.2 pH. My red wine which goes through primary and MLF usually goes from pH 3.5- pH 3.8 after both have finished.
