About to pick up 10 gallons of fresh-pressed - what 10 recipes should I try?

I've been making cider off and on for a couple years now, usually in small 1-gallon batches off of storebought juice. I recently got the opportunity to acquire 10 gallons of fresh pressed juice from a local orchard. Rather than making a couple of 5-gallon batches, I thought I'd take the opportunity to try 10 different recipes on 1-gallon each and gain more hands-on experience with a variety of styles. Any recommendations on top recipes any relatively newbie cider maker should try? I was just browsing through the cider recipes subforum and found a few that caught my eye:

5 Day Sweet Country Cider

Candied Pecan Hard Cider

Easy Blackberry Cider
 
How about experimenting with different yeasts? Or making a batch of graff (cider and beer ) or a cyser ( a mead using the apple juice to dilute the honey rather than water)...
