I am sampling a IIPA from Harpoon called Leviathan. I think it is nothing short of brilliant with rich malty backbone and scores of hops that promote bio-porn in your mouth.

All this while planning tomorrows AG brew day. Tomorrow I planning to brew an AG IIPA that will hopefully become the standard house IIPA throughout the rest of the 2009 schedule. I call it Bold Cali IIPA.

<------Look at my recipe in my drop down for Easy Imperial IPA. See how it compares to what you are thinking of doing tomorrow. It is a solid, solid IIPA that really is a great base that can go Black, Amber or just stay what it is.
 
FUNNY stuff. I am doing the Centennial/Cascade combo as well. I plan to mash 15lbs of Maris Otter, .5lbs of Carapils and .6lbs of Crystal 120L @ 154F. Think it's too high?

I plan to sparge @180F
 
Do you like DFH, Lagunitas or other high FG IIPA's? If so, then keep it around that temp. I mash at about 151 so that I can have a lower FG. Instead of 1.020, I typically enjoy a 1.015 or less. My Pliny the Middle Child came out about 1.018 final which works for the style, but is a bit more malty. Still really tasty, but certainly not as crisp and a little "heavier" in the mouth. You know when you have had two, where at 1.015 or less you have two and attempt a third. At 8% they add up quickly ;)

Love me some DFH. I tried to hit 151F but ended up with 154F instead. Ah well. I'll just end up with beer that will finish at ~1.020 instead of ~1.016. With six ounces of hops at the boil and two at the dry hop, I should be fine. I used 15lbs of Maris, .5lbs of Carapils and .5lbs of Crystal 120L.
 
Sounds nice. Good job and it should be tasty. It will go less than 1.020 if you are using a cali ale yeast. It will turn out just fine and now you can fine tune it to your specs. Lagunitas mashes often at 160 I hear, though I haven't talked with the brewers (though they are just down the road) where as 9 out of 10 brewers mash closer to 154-155. You will have beer in the end and should be able to enjoy it.

What was your final hop schedule?

PS...when it is done fermenting, taste it. If it is malty, then dry hop it with twice the number of hops. If it is bitter and makes you pucker, keep it at 2 or 2.5 oz. I like the 1.5oz Centennial and 1oz Cascade. Cascade isn't boring, but it needs a lot to make it taste specific to the Cascade. Centennial takes less to make the same flavor and really will help you out with a nice citrusy flavor.

Had this beer at a festival in Jacksonville. It is, IMO, the only thing I've liked from Harpoon. It was a damn fine beer.
 
I forgot the last thing, I really enjoy my IPA's as light as possible. I would put it at 2 SRM if it were possible, but there just isn't any way. So I aim as close to 7-8SRM as I can. Which means that I keep aiming lower and lower in the Crystal dept. I have gotten to 40L as of my last one, it is almost right.
