I plan on making a simple extract hef, it has been over a decade since I have brewed anything, so I have a few quick questions.

1. Can the yeast survive in my basement? I would say temp is between 55 and 60, closer to 58. I'm worried about it getting stuck.

2. Will moving to a secondary after a few weeks improve the beer noticably?

3. I believe I read on here that leaving the beer to sit on the yeast is not that much of a worry anymore, so in theory i could let it sit for 1- 1/2 months in the primary?

Thanks in advance for your time.

1. 60* would be perfect for something like WLP300. I'd pitch at 60* and wrap it in a blanket - I think it would begin to stall out below 56*. One it gets going it'll keep itself warm.

2. Nah.

3. You could, but wheat beers tend to decline in quality more quickly than standard beers. I'd bottle after 3 weeks, maybe 4 if you're strapped for time.

I just made my first ever batch, it's a Hefe as well, I used white labs yeast and I pitched it at 70*, it sits now at room temp of 70* is this ok? Whats the blanket for, to warm it up ? Just wondering. Also, should I put a blanket on top of my fermenter to keep it dark? It's in my bathtub so it's in a well lit room when we are in there getting ready for work. :tank:
