So, my lady tells me that one of the guys she works with brews his own, and grows his own hops, and that he is trying to give some away. So naturally I volunteer to dispose of the said hops. Not sure if these are Centennial or Cascade - he grows both.

Since centennial is cascades with extra bittering, you're set for some monster IPAs! Hope they were stored cool.
 
When I visited Deschuttes Brewing in Bend Oregon they showed me their "Hop Room". Which was basicly a giant cooler that had a mountain of hops. Each section of the mountain was a certain hop that they collected with full sized pick axes.

It looks like you'll need some professional hop baggers. One of them works the scale while the other bags. They're cheap labor, just throw them some candy and they'll work for hours...

I bet if Kathy Lee Gifford ran a brewery, that picture would be a common site in the brew house!
