hello Brewers,

I brewed a 90 min clone efficiency was low due too 17.5 pounds of grain and a few too many beers during the process. Here is my problem after primary I racked to secondary and had a cider taste and smell, after 2 weeks in the secondary and 2 oz of dry hops it still smelled and tasted like apples. It's been 3 weeks in bottles and still doesn't taste right. Does anyone think that it needs more time or dump it? Thanks
 
I suspect that what you are tasting is acetaldehyde. This compound is an intermediary compound when yeast are converting sugars into alcohol. Acetaldehyde can be formed in excess if the yeast you are using is not healthy, not enough yeast was pitched, the beer was taken off of the yeast too early, or a lack of oxygenation. It may get a little better with some age, but if it is a very pronounced green apple flavor and smell, it may be permanent.

Rule number one in brewing is to not start drinking till after the boil has started.

Curious as to what yeast you used?

I had two batches last winter using Safale s04 that had cider smell coming out of the fermenter. It cleared up within two weeks in the bottle though.
