6 gallon recipes???

I see a lot of recipes that seem to be for 6 gallons or eleven gallons. I just looked at the "Tits up" IIPA recipe from Biermuncher and it again talks about "6 gallons in the fermenter."

Why make six gallons of beer when a corny can only hold 5?
 
You either have 1 gallon that you can bottle rather than keg, or more likely you need to account for loses due to trub and hop sludge (which for a IIPA can be significant).

So, 6 into the fermentor, 5.5 into the secondary (for dry hopping/clearing/whatever), 5 into the keg.
 
It's impossible to brew 5 gallons and keg 5 gallons. I can just fill a corny with a 6 gallon batch. And i'm not spending 5 hours brewing to see a 3/4 full corny.
 
So I guess I need to get some 6.5 gallon carboys.

Mine are old, but I'm pretty sure they're 5 gallon carboys. Don't quite fill a corny unless they're really full, which they usually are, up to the last line on the glass with some significant blow off.
