Hi Group,

I'll be brewing up Jamil's Southern English Brown recipe soon:

5 lbs LME English Light Extract
1 lbs Caramel Malt - 80L
10.0 oz Caramel Malt - 120L
8.0 oz Special Roast
6.1 oz Chocolate Malt (light) (200.0 SRM)
4.0 oz Carafa Special II (Weyermann)
0.85 oz Goldings, East Kent [5.00 %] (60 min) Hops 15.0 IBU
1 Pkgs English Ale (White Labs #WLP002)

Now the question: It's a 6-gallon recipe. Why would this not be a 5-gallon recipe? Is he allowing for boil-off? Should I treat it as if it's a "standard" 5-gallon recipe, or need I make a change here or there?

Thanks a LOT,
Nige

According to what he wrote in "Brewing Classic Styles" 6 Gallons post boil will give you 5.5 Gallons when chilled and racked to the fermentor once you leave the hot break and hop sludge behind. The 5.5 gallons yields 5 gallons when racked to a bottling bucket due to trub loss. I think you'll end up with closer to 5.25-5.5 gallons when everything is said.
