Depends on the yeast, I think. Higher gravity worts have more chance of having stuck fermentations. And water calculations might not work out being halved either.
 
Yes, pretty much. But you have to be careful going fully double (for some reasons the above poster mentions).

The easiest way to increase ABV of a brew is to shrink the batch size. E.g., Brew a 5g recipe as 4g.
 
I did that with my first all grain it was a scottish 60 that I also threw in a lb of dark DME and it was a caramel bomb it has only now after 2 yrs that it is decent, but what the hell you dont know till you try it.:mug:
 
There is a balance between your extracts and speciality grains. More importantly there's a balance between amount of water used and the speciality grains.

It's the same principle as making coffee except with some of these roasted they can become downright nasty at high enough concentrations.

You would be better off posting the weights of what's in the kit and we can scale it to 2.5 gallons, increasing the alcohol content but balancing those grains.
