I have a extra 5 gal. glass carboy I'm going to use as a primary fermentor.

What would be a safe gallon/amount to brew without making a mess?

I regularly do four gallon batches in five gallon carboys with any blowoff. Good temperature control is the key.

edit:
That was suppose to be "without any blowoff." :p

I have done 4.5 gal batches in one of those with a blow off tube. You probably could even get away with doing 5 if you didn't use a yeast that had much krausen production and if you used fermcap.
