Is there any problem with that much headroom? I wanted to stick with EdWorts recipe and I have only 5 gallons of juice. Should I just get some more?
 
I don't think is should hurt. Once primary fermentation begins, the CO2 being produced will push out the ambient air and will protect the Apfelwein. If you topped off with additional apple juice, you will dilute the final product a little. I would leave as is.

Don't worry about it. stick to the recipe and you don't need to worry headspace. i just did 5g in a 6.5g carboy. worked great.
