Just brewed an imperial stout the other day for the first time, but basically wondering if I added enough hops to balance with the sweetness.
6.6 lbs Golden LME
8 oz black barley
6 oz chocolate specialty grain
6 oz crystal 40L
Safale 05 1 packet

Specialty grains steeped 150-170 for 30 minutes. I added 1 pellet of cascade hops at 70 minutes, 0.5oz of cascade hops at 30 minutes, and ~0.4oz of hops at 10 minutes in the boil. The OG ended up being 1.100, which was higher than anticipated. From what I've read, for stouts with this kind of OG, they require more hops to balance the flavor... Was 1 oz total enough? Is there value in adding dry hops during secondary fermentation?

The original plan is for this to sit in primary for ~3 weeks before racking to secondary for 5 months. I plan on adding vanilla/coconut close to bottling.

I don’t think there’s value in dry hopping. It won’t add any meaningful bitterness and after 6 months there won’t be any flavor (not that you’d want too much in a RIS anyway). Plug you recipe into brewers friend or another free online calculator if you want to know what IBU’s you’ll get (which is an estimate, at best).

If you only added 1 pellet at 70, & half an ounce at 30, my guess is your IBU wont be to high. dry hopping will not raise your IBU's. Dry hopping adds aroma to the finished beer. 5 months in secondary is way to long. I have never used a secondary, but ive read that 2-3 weeks is best. Hope this helps. Welcome to the forums.
