I am in the designing stages of my next brewery. I have access to kegs for keggles and am thinking of using a 1/4 keg or 6-8 Gal pot as a dedicated HERMs tun (the "1/2" in my 3-1/2 vessel set up).

My rational for incorporating a dedicated HERMs tun is by using a smaller volume of water I should get faster mash step response. After the mash I also plan to use the HERMs tun as my chiller.

Does anyone have this set up already and I'm curious if anyone has any comparisons between dedicated smaller HERMs tun vs using HLT with HERMs coil.

For those with dedicated smaller HERMs tun, what size (wattage) heater element are you using?
