Well...I brewed my 2nd all grain New Years, last brew of 2011. I think it is going to be high abv. I forgot to take an OG, but after 10 days it is still bubbling every 6 seconds. I was going to move to secondary, to let it clarify for a couple of weeks. I was scheduling this weekend, but think I will wait another week or two.
 
Sounds like a good plan to let it sit. What was your predicted SG (1.05, 1.06, 7, 8, 9) It's always best to let it sit longer on the yeast than to rush it off before it's done fermenting.
 
How do I figure OG of added sugar? I took a recipe and had left over sugar, so I added about 3/4 lb. that was all the difference in the recipe I did.
 
Sugar is around 46 points per gallon. If you added 3/4 lb of sugar to 5 gallons you would have:

0.75 lbs * 46 (pts * gallon / lb) / 5 gallons = 6.9 points.

So lets say you're recipe was supposed to hit 1.060. Adding that 3/4 lb of sugar would now give you a gravity of 1.0669.

If it's still actively bubbling, I would definitely wait it out. Probably let it sit for a week or so after active fermenation (stable gravity) has ceased.
