2 Stage Temp Controller?

I am looking to create a fermentation chamber that can double as a Bread Proofer for the misses.

I am looking at this:Pre-Wired Or this one:Not wired

I am curious about the heating element? What do people use? Gonna use a regular fridge or a glass door POP Coke fridge I have.

A cheap heating pad should work pretty well.

A heating pad or a small heater/fan unit. I bought my heater fan from Home Depot for $14 and it circulates air while turned on. I am happy with it.
