I brew all grain but time is not on my side. Is there a proven method for splitting up a brew day? Can I collect my 1st abd 2nd runnings on day and boil/cool the next?

Due to high levels of lacto in the grain, it will sour if not boiled. the best way to save time on brew day is to do all that you can the night before.

I mill grain, weigh out hops, have ion additions ready, and my mash water in the pot the night before + all equip. out. I get up early and am usually done before 11Am.

I do this. I mash in the PM and then sparge and boil in the AM. The acidification of the mash is minimal and may impart a flavor you like. Many people do this.

There are several threads on this already.
