I am brewing 2 batches Saturday to keep the pipeline full.

I have 1 temperature probe to regulate the temperature in my FC. Should I keep the probe submerged in a water bath and hold a temperature a few degrees cooler than desired fermentation temperature, or should I tape it to the wall of one of the carboys? If the latter, which would be best to choose for this?

Both have an OG around 1.054 with the first using 1056 (Red Tail Ale clone) and the other 1084 (Dry Stout).
 
Personally I'd tape it to the beer that's been put in there recently. I'd rather have an already mostly fermented beer be a little chilly than a newly fermenting beer be too warm.

In your case, tape it to one and call it a day, IMO.
