I’m 8 days into my first batch. I didn’t do any research, just using the process my nephew uses. He said to ferment for 7-10 days. I taste-tested it on day 7 and it still tasted like sweet tea, but carbonated with a taste of fermentation, so I figured I’d need to go the whole 10 days for the strength I like. But I wondered if I did something wrong. I realized the jar I’m fermenting in is sealed, and wondered if it should have been unsealed. My nephew’s recipe didn’t specify so I researched online and discovered that it should just be covered with a cloth.
My questions:
1) What should I do with my batch now?
2) Is letting my batch breathe now good enough?
3) Did I ruin my batch?
4) Did I ruin my SCOBY?
 
It should be just fine if you have a new scoby. The temp you ferment at will determine how long it takes and also your taste. My batches take from 18- 23 days at 72*- 74*. 7-10 days happens at 80*-82*
