I've tried twice to make Kombucha with all green tea and 9 days in and it is basically flat still super sweet tea -- its almost like I've forgotten the starter except I do have a scoby formed over the top, it is almost like the process stalls. Is there something lacking in green tea that requires other ingredients? My 50/50 black/green tea is lights out delicious ....

... assuming no infection I should be able to rescue my scoby from this mess right?

I use 100% organic green tea to make kombucha all the time. It comes out beautifully light, effervescent and dances on the tongue. Just give it more time. Mine usually takes 8 days but the very first time it took 18 days.

Good luck.

Interesting that it took so long the first time. Day 14 is on Saturday so I'll check it out again.

Thank you.

I have done all green tea. It's slower because it lacks some nutrients (black tea has them).

Let it ride. I go a month sometimes. Then backsweeten.

Its slowly getting a bit more tart ... two massive scobys in each now so there is some progress here. Can't believe how slow this has been ...
