I hope this is the right forum for this question.

I've been trying to get some gear to do sour mash brewing. I'm working on getting a ph meter and a vessel to incubate at the proper temps.

I understand the depletion of oxygen is a huge factor in a successful sour mash.

I'm about to acquire a 10 gallon corny keg. I don't need it for serving or fermenting in. I was hoping it would work to do a sour mash/wort.

Anything I'm not thinking about that could be an issue?
 
Thanks for the reply. I just picked it up today. It's in really nice shape.

I was thinking because I can deplete the oxygen and do full volume, It would be a great vessel.

Should I use a spunding valve for the release of any pressure. And Do you think a heat belt/pad would keep it at that 120f temp if I insulated around it?
 
I used a 5 gal corny to sour wort a berliner style beer last summer and it worked great. I just released the pressure once or twice a day.
