I have some ingredients to use up and I was wondering how much malt extract as yeast I would need to make a on gallon batch of brown ale? I also have some crystal and chocolate malt and Fuggles hops.

Any ideas?

How much malt extract as yeast? Yeast is not DME or LME so zero.
Or do you want to know how much to use for a gallon batch? depending upon your desired gravity, that is up to you.

How much LME/DME do you have? How much Crystal? How much Chocolate Malt and what yeast do you have?

Anytime you want a recipe using what you have on hand take the time to list what you have on hand with more detail. It would really expedite the help in my opinion.
 
I think he meant "and yeast", but hello is right, give us a list of what you have that you want to use up
 
I have the following:

150g Fuggles
225g Dark Crystal Malt (400EBC)
160g Chocolate Malt
7g (or 11g, I can't remember) of Coopers Yeast
500g Light DME
1kg dextrose

Can I make a beer from these of 1 gallon to go in a demijohn?

I know I must be nuts to comment (I am too green a beer maker to have anything useful to say ) but I think the question about the gravity was more about the starting gravity rather than the finishing. If you said that you were hoping for a beer with a gravity of 1.040 then I think you may just have enough DME to get there. I would think that the dextrose might increase the gravity but not provide any fermentables - so you MAY just be able to produce a gallon with a potential of about 5.25% alcohol by volume although the truth is I am assuming that 100 percent of the sugars in DME are fermentable and that you will extract a tiny amount of fermentable sugars from the specialty grains. My background is in wine making and I have just about everything to learn about beer making, but if I was to to be asked a question about the gravity I was aiming for I would assume that this was about the starting gravity rather than the finishing gravity... although with beer I may be laughably wrong.
 
I'd say you could make a dark mild or English bitter. 500g of DME will net you about 1.045 OG so maybe a bit too much for a mild but that's what I'd brew.

500g DME
50-80g Dark Crystal (depending on how much mouthfeel you like)
30-50 Chocolate

Use brewing software to figure out much Fuggles to use, but your IBU's should be in the 20s

Skip the chocolate if you want to make an English bitter. Fuggles at 60, 20 and 5 mins but nothing silly, low 30s for IBU. With 1 gallon brewing the hop additions are single figure grams so no way will you use your full stash.

If you brew the bitter then you could probably throw 20-30g of the dextrose in to dry the beer out a bit but I wouldn't bother with dextrose if you go with the mild.
 
Thanks for this. I ended up doing a mini mash with the following:

300g Maris Otter
500g Light DME
125g Crystal 400
50g Chocolate Malt
10g Fuggles (60 mins)
5g Fuggles (15 mins)
5g East Kent Goldings (5 mins)
5g East Kent Goldings (4 day dry hop)
3g SA-04 Yeast

I think it will come out around 6% - the OG was 1.064

Didn't realise I'd get so much sugar out of the maris otter. No idea what it will taste like but I don't mind too much... It was more of an experimental batch.

I've started using Brewer's Friend (which I find a little easier than Beer Smith).

What is Brewhouse Efficiency all about?!
