When brewing a one gallon batch of apple cider are there any major differences from a five gallon brew that I should watch out for? I.e initial fermentation time, amount of yeast needed, and sugar needed?
 
all ingredients would be 1/5 of the 5 gallon batch. including yeast, but that's flexible and you CAN add more than 1/5 of the yeast without hurting anything.

Time will remain the same.
