Hello everyone!

I'll be doing an upcoming brew where it looks like my original gravity will be about 1.070. I will be using a dry packet of Nottingham yeast and I was just wondering if one packet will be enough? I know a packet is meant for 5 gallons but I assume there is an upper limit for the original gravity range, and I think two packets will be two much.

I have some yeast I collected from a previous brew using Nottingham (This yeast was from an Irish red and I will be brewing a quasi-Irish red) so should I risk infecting my new 1.070 brew with some of the old yeast and a new packet of Nottingham?

Let me know what you think. Either 2 packets of Nottingham, a mixture of a fresh packet and some repitch (also how much repitch), or just one packet of Nottingham.

A 5.0 gallon batch of 1.070 brew should require ~242 billion yeast cells (according to yeastcalc). A packet of properly rehydrated nottingham should yield you ~200 billion yeast cells. In my book, that's close enough.

Edit: Unless you have reason to believe you've infected your saved yeast from the Irish Red, you should not be concerned about reusing it and infection. In fact, you could save yourself some money by reusing your saved/washed yeast instead of using a new dry packet; plus, you'd could potentially provide the proper number of yeast cells versus a slightly reduced amount.
