Hey All,

Back with my next brew, going for a nice summer beer, recipe below

2 Cans of Coopers Australian Pale Ale
340 grams Clove Honey,
100 grams of Maple Syrup (leftover so threw it in)

12 grams Galena hops,
12 grams of Williamette Hops

both boiled for ten minutes,

25 litre brew, OG was 1.050

I will dry hop with 20 grams of Citra hops that i have left from my last brew. Will dry hop on day ten in the fermenter, will dry hop for 10 days in total before bottling.

Has anyone any thoughts on this, anyone tried anything similiar and how were the results. Im looking forward to seeing how this turns out, Nice and simple beer. I hope its tasty.

The combination of Citra hops and maple syrup might make for a funky taste combined. To me it looks tasty without the syrup.
 
Interesting point Flars, i have never used maple syrup before, it was just the remainder of a jar that was lying around so i threw it in, approx 100 grams, i didnt think id get much maple flavour off it to be honest.

I certainly hope i dont get any off flavours as a result of the maple syrup and citra hop combo, i guess time will tell

Have you tried the "toucan" of coopers before, i know you have brewed quite a few of the Coopers kits already.

i did a Coopers Pilsner with a 1kg of honey and found there wasn't a ton of honey flavor. so with the amount you used i wouldn't worry about it adding flavor.
 
Adding a 1/2lb of honey malt to a pm or steep will add some honey flavor. Moreso then honey itself,which is basically organic glucose. They say you get more honey flavor in a mash,though.
 
Hey All,

I just wanted to give an update on this beer,

I bottled it last night after 7 days of dryhopping. I have to say the smell of this beer is like a fruit cocktail, very very fruity smell, i didnt take a taste of it at the time of bottling so i really hope that its not very sweet to taste. i hope there is a good bit of bitterness at the back of it to balance the whole beer out.

I presume there is as i used two pre bitter hopped cans from coopers so the bitterness should be in there. I checked the IBU's on the can and it says 340 so double that is 680 and then divided by 24 litres makes it about 28 IBU's so that should be a good amount of bitterness for me.

Looking forward now to opening on in about 3 weeks time. Ill update the thread when i do my first tasting.

When I did the Burton ale Cooper's toucan thing,I got my FG down to 1.017. What was your FG? The fruitiness likely is an ester from the Cooper's ale yeast. Common of English yeasts & a common component of English ales. If there's a lot of fruitiness,it could be your ferment temps were a bit high. 3-4 weeks in the bottles at room temp,then a week in the fridge will fix things as well as can be hoped for.

I actually used the Safale 05 Yeast instead, felt it was a better yeast for the job,

funnily enough i didnt take the hydrometer reading as i broke my hydrometer tube, was going to put the hydrometer into the fermenter but decided against it.

it was fermenting for just over 3 weeks so it should really have finised fermenting so im not so worried about that, i femented it for just over 2 weeks at 22 degrees (using heat belt) and then 7 days at room temp of 16 approx.

dont get me wrong the smell is lovely, very tropical fruit rather than apple/cider smell. But its a really strong sweet smell. more than any i had before.

Im sure all is fine but i guess time will tell.

According to my brewing notes,my Burton toucan took 5 weeks & one day to get down to a stable FG of 1.018 from OG 1.065. That could be why yours is a bit sweeter & fruitier. It's good to have a hydrometer handy for bigger beers like toucans to be sure it's at a stable FG.
 
Wow, ok.. now that could explain something...

I did take a starting gravity of 1.050 so it wasnt a massive beer especially considering i assumed it would finish around 1.015 so thats not really up there on the ABV %.

hopefully i wont have an exploding bottle problem caused by unfermented beer haha.. Im sure it will be fine.
