Making a Brett starter for bottling

I am planning on making a brett starter for bottling my sour beer. My current plan is to do a 500ml starter, then a couple days later add 500ml of the sour beer to prepare the brett for the acid shock. I was going to do this starter with corn sugar, since that is what I will be using for bottle...

    Krausen and Wyeast 3724 Saison

I talked to someone that said the key to this yeast is a proper sized starter and to start fermentation at 80 and slowly rise it over a week to 90

Got my starter kit in the mail

http://yeastcalculator.com/ Use that to determine how big of a starter you need. I use 100g of DME per liter of water. So if you need a .5 liter starter, use .5 liters of water and 50 grams of DME

    New Temperature controller (Brewbit)

Thats why I didnt go with this thing. Kickstarters never deliver near the time they promise. Cool product but its a bit overpriced IMHO.

    What to age in?

I would throw some boiled corn sugar in the keg then rack on top. That way you are carbonating while you bulk age it. Then you can just throw it in your kegerator when you get home and it should be ready to go.

Okay to make a lager starter at room temp?

It is actually desirable. The ideal temperature for growing yeast is around 70 deg F I believe

    New Temperature controller (Brewbit)

I think thats a terrible move by them. $150 is a perfect price point for this thing. At $200 I doubt they sell as many.

    Fruit flies in yeast starter

Went ahead and made another starter. I will just have to pitch the whole thing. I dont like doing that but I have no other option at this time

How long can my starter sit?

I have had no problem in the past storing a starter in the fridge for a week plus. Just decanted then allowed to warm to room temp while sitting on my stir plate.

    Fruit flies in yeast starter

I am pretty sure I know the answer to this but I figured I would ask anyway. I discovered 2 fruit flies floating in the second step of my starter today before putting it in the fridge. I plan on brewing tomorrow but I am now questioning that. Should I abandon the brew and buy another yeast
