    I have mine set for 71% normally, and depending how big of a beer I am doing I throttle down. Since I'm using 6lbs of dark DME I feel like I'll be pretty good.

    Ok, Awesome ill lower it to 8.5% get about 33SRM. should I still cold steep or add the Carafa3 to the mash at sparge time? What are your thoughts using Midnight wheat over Carafa3?

    Ok, I don't have an option for Sinamar, since ill be brewing this week and my LHBS doesn't carry it. Ill go with cascade and liberty. What if i cold steep the carafa3 or use Midnight Wheat? ...Sam Adams only list 3 grains and gets it to 50 SRM(from the website).

    A new situation just a rose. This is the biggest beer I've ever done. I'm doing a 5 gallon batch, My grain bill is so large it ask for 10 gallons of mash water for 1.5 ratio. At 10 gallons I don't have any water for my sparge. Is that when I substitute my base malt for DME?

    I dropped the black patent from the grain bill. As for the Spirals is there any issue aging them longer then 6 weeks? I am kegging so ill be force carbing. Is there a better yeast to use then the ones listed.
