    Funked up kegs

I've been kegging for over 6 years and just recently have been getting sour beers from a few of them. I use pbw religiously and sanitize before filling. I disassemble them and clean with a keg washer each time. Anything stronger than pbw suggested for a deep cleaning?

    10 gallon transfers

Maybe I'm over thinking this but I'm going up from 5 gallon batches. I typically brew alone in my garage and ferment in my cool basement. Now I can carry a fermenter down stairs holding 5 gallons...I'm thinking 10 not so much. I'm investing in a 14 gallon chronical and need to figure out a...

    Wyeast saison-brett blend

I'm almost a week into primary with this yeast in my saison. I've never worked with brett before so I had a question for those much wiser. Should I rack after primary? Should I let it sit on the yeast? How long should I let it rest with the pellicle? When kegging should I siphon from...

    Too much coriander!!

I recently kegged a wit that I've brewed several times before. In a pinch(since I forgot to pick some up) I used crushed coriander from a local grocery store. It was in a powder but only .3 ozs. Well that was a mistake. It's horrible. In your experience, will it dissipate or not? Can this...

    the world's best beers??

I'm putting this out there for General discussion. Perhaps it's me and my palate but do the most highly rated beers just still taste like beer? What I mean is, are they really worth the hunt and the money? Now don't get me wrong, they are great. However,I feel that their hoopla over shadows the...

    Brewha mash tun

I've looked on here and couldn't find anybody talking about this(just their fermenter) I'm looking to upgrade from my igloo cooler to their rims setup. I was looking to see if anybody here had used it and what were their thoughts and real world issues with it. It looks as though I could...

    DME turned to taffy

I made a starter with dme that was taffy like before I added it to the water. It melted during the boil but for the most part it was hard and candy like. I separate starter sized portions into Ziploc bags and keep them in my basement. Anybody run into this? Was it still edible by the yeast...

    Belgian Xmas ale

I've seen some different recipes on here and have decided to make one for my family this year. Basically what I'm looking for is something dark and spiced like a dubbel with spice additions. Who has actually made something similar that can throw some suggestions my way? I have a recipe for my...

    winter brew cooling

So it's that time of year again and here in Michigan it's almost single digits. I've brewed on semi comfortable days in years past without issues. I just moved into a new home and my wife doesn't want pipes to freeze so we've turned off the spigot outside. Have any of you just put the lid on...

what dme do you use for your starters?

I've been using extra light so as not to contribute flavor or color. Do you use something different? Do you change based on what you're brewing? Cheers

    tangerine instead of orange peel

I'm brewing up northern brewers le petite orange and they say that you can add orange peel and coriander in the boil. It's optional. Has anybody else made it? First should I add it? Secondly, would tangerine be much different than orange? Thanks and cheers.

    carbonation issues

I've been letting for almost a year now. I have 3 taps in my kegerator and love it. My question is for those that keg. Does it seem as though the beer gets better carbonation after a lot of beer has already been drank? What I mean is I put my kegs on gas and a couple of weeks later some...

    brew dogs system

If you've seen their show then you'll know what I'm talking about. I know what a Brutus single tier is. Are there designs that can be found for my brother to replicate? He is a machine builder and built my 3 tier but I'm thinking pumps with recirculating mash would be awesome. Some new...

    Abbey ale yeast

I've heard that it has a long lag time. However, it never started. If I repitch, will my beer be o.k.? My starter never did much of anything either. I'm thinking trappist high gravity because it's always an aggressive yeast. Well I notice anything from the other yeast?

    dishwashing keg

Wanted to get your attention. Has anybody used powdered dishwashing detergent to clean a keg? I have a Mark's keg washer and have used oxyclean and my recent keg still has a sort of film inside of it. I used a brush to remove deposits and rinsed thoroughly but it still seems dirty or oily...

    competitions and disappointment

If this comes off as arrogant, that isn't my intention at all. I've been drinking craft brews from breweries and small brew pubs for years. I truly believe I have a palate for good beer and have also tried some that I wasn't impressed with. I've been brewing beers for 3 years now and with the...

my starter needs a blow off

I made a pretty big starter for an imperial ipa that I'm brewing today. I made it Friday night and pitching it today(Sunday). No stir plate just swirling occasionally. I woke up this morning to this.

    kegged beer into bottle

I just submitted a few beers to a comp and had to bottle them. I cooled the bottles to reduce foaming and used a hose to fill them. Of course they foamed up and made a huge mess and wasted beer. When I capped them, the neck was pretty empty. I hope that doesn't count against me in the comp...

building up yeast from a plate

I have a plate of 3 different yeast on the same plate. All were scratched and grown by a friend that knows how to do this stuff in a lab. I've read directions and how do I begin with 10ml then 10x then 10x step ups from a pin? Can I make my normal starter volume of dme and start stepping this...

Is 64° too cool for fermentation?

I've recently moved my brewing into my fiancee's basement. And it's cooler than my previous brewing room in the upper 60's lower 70's. The reason I'm asking is because I have a wheat fermenting for 3 weeks now and still going strong. Having said that, every batch I've fermented down there has...
