    Mash Temperature and Mash out

    On all-grain brewing is the temperature based on the grain bed or the wort? If the grain bed temp drops the wort temp will be much higher to get the mash temp back. Does that cause off-flavors? With a mash out at 168 is that the grain bed temp or the wort temp?

    You are right; the OG for the wheat was 1.05. I am entering just to get feed back. I have spent time this summer building temperature controllers for refrigerators I picked up at NC State Surplus in Raleigh for $25 each. They worked really well at holding the temps during fermentation.
