    Why is lots of yeast even needed

    If the yeast has to multiply a lot, it's going to be stressed and give a lot of off-flavors. And it will probably won't be strong enough to finish the job.

    An other difference between a chest freezer and a fridge is control on humidity. A refrigetator is built to stay dryer than a freezer. So, there is more chance for mold to grow in a chest freezer.

    Ouch! You are really playing with fire waiting this long to pitch you yeast. I think it would be less risky to pitch your yeast without a starter than waiting this long...

    Should we try to lower our (fly) sparge water before using it? Or will the grain still be able to lower the sparge water's pH so that it doesn't extract tannins
