IIPA w/ 12 oz of Centennial hops - what OG should I aim for?

I was going to be brewing a black IPA and an IIPA back to back, so I wanted to get some extra value and use an entire pound of hops across both recipes. Well, I've learned the hard way - that's just doing it wrong. I used the hop schedule posted earlier in the thread: All hop...

IIPA w/ 12 oz of Centennial hops - what OG should I aim for?

    Specialty grains + other non 2-row mashables include: 1 # white wheat 1/2 # aromatic 1/2 # carapils 1/2 # honey malt 1/2 # caramel 60 For base grain / DME ratio, was thinking of going with: 4 # Rahr 2-row 8 # Pilsen DME

IIPA w/ 12 oz of Centennial hops - what OG should I aim for?

Ok, hops schedule is planned as follows (I'm certainly open to suggestions for changes to this, however). All hop additions are Centennial: 4 oz @ 60 mins 2 oz @ 10 mins 1 oz @ 5 mins 1 oz @ flameout 4 oz dry hop - secondary

IIPA w/ 12 oz of Centennial hops - what OG should I aim for?

I've got the exact recipe at home, and I'm at work. But I can tell you that the hop schedule is largely 10 minutes left in the boil and beyond, including a dry hop addition. Something like 4 oz. bittering, 4 oz flavoring, and 4 oz dry hop.

Will 1.080 be good enough for a balanced taste? Or should I go closer to 1.100?

Mash base grains plus adjunct, then steep specialty grains?

I hadn't even considered what boiling the "tea" might do. I was just trying to maximize my base grain / DME ratio. That's interesting. I think I might start doing that too.

Mash base grains plus adjunct, then steep specialty grains?

Well, it varies from recipe to recipe. Sometimes as little as a pound, sometimes as much as 3. Just trying to use as little DME as possible to achieve better FG.

Mash base grains plus adjunct, then steep specialty grains?

Do you sparge? I've been doing a max of 6.5 lbs of grain (including specialty grains to this point), and using a 1.00 to 1.33 qts/lb of both mash and sparge water. With a 5.5 gallon kettle, this is pushing the limits sometimes.

Mash base grains plus adjunct, then steep specialty grains?

That's what I've been doing thus far. But I have a limited mashing capacity as a partial mash brewer because my kettle is only 5.5 gallons. So I wasn't asking in an absolute way whether it was ok to separate, I was asking because separating will allow me to mash more [edit: base grain] and use...

Mash base grains plus adjunct, then steep specialty grains?

I use a BIAB system. Have a 5 gallon cooler as a mash tun, and only a 5.5 gallon kettle. Usually can only mash/sparge about 6 or 7 lbs. of grain without overfilling the kettle. My question is, in order to mash more base grains (and adjuncts for some recipes), can I leave out any...

Yeast giving up on high gravity beer

Yeast only need the O2 to reproduce, correct? If so, wouldn't it stand to reason that you still just need to pitch at a higher rate? Honest questions...I am looking for some education like the OP.

Imperial Stout (with variants). Seeking advice.

Also, I'm no expert on the 1056 American Ale yeast, but how alcohol tolerant is it? And what was your FG? Did you measure?

Imperial Stout (with variants). Seeking advice.

I did this with success once on a Bell's Two-Hearted Clone. I definitely wanted some bite from carbonation on it, and it had failed to carb up on its own. I just uncapped, sprinkled just a tad of S-05 in each, and then recapped. Just be sure to sanitize the new caps, your bottle opener...
