    fermentation concerns??

OK, was chatting with our LHBS guy and he suggested bringing the temp up. he suggested I run a bucket of hot water, and let it sit in there for about 30-45 minutes. His thoughts were that the yeast may need a warmer temp... did as he suggested and it appears to be back on track... getting a...

    fermentation concerns??

I have checked and it's dropped about 12 points on the refractometer (from 1.052 to now right at 1.040). I anticipate this should finish at or near 1.014-1.012 so it still has a long way to go.

    fermentation concerns??

I have a 5 gallon batch of all-grain dunkelweizen currently fermenting. After pitching my yeast I had activity within 4-5 hours and was very active for about 24-30 hours (maybe moreso than what i've normally seen). After this, it has slowed quite dramatically from a bubble about every second or...

    worst beer you ever made

was the path I took... extract brewing, then moved to partial mash with LME, then moved to the DME, and about a month ago did my first all-grain. Was a great experience and my first all-grain appears to have succeeded! Good luck!

    worst beer you ever made

the worst would have to be my first Cooper's Lager i made about 4 years ago. I totally didn't know what I was doing and did the following: added 5lb of organic sugar (long story here), didn't rehydrate the dry yeast that came with it, didn't bring down my wort to a reasonable temperature, and...

Worst Commercial Beer You've Ever Had?

Southern Star brewery's Rauchbier While I love bacon (as do most all americans), i don't particularly want it in my beer! close second is anything that uses malt liquor and calls it beer!

I think I'm done with WYeast

find one that will ship outside your area with a cold-pack. Due to what I suspect is low turnover at the LHBS, i have started buying from one in Austin that will ship my yeast with a cold pack. Since I'm about 3 hours away, i get it the next day and have never had any issue with Wyeast...

    Suggestions for Summer All-Grain brew

Ok, so i'm looking for a very good lighter venue summer brew. i've been leaning toward something in the rye family or maybe a dunkelweisen, but am very much open to suggestions. I really don't want it super hoppy or malty brew, but something light on a hot (Houston) summer day..... thought?

    Double Pitching

OK, so this has probably been asked before and I am too lazy to search for it... but....... what is the benefit of double-pitching (especially in high gravity beers)? I mean, if your yeast is healthy and if you arriate good, why would i want to ad more yeast? thanks in advance. Eric

    What are you drinking now?

Currently enjoying a LME Imperial Stout, DME Dopplebock, and LME American Bock. Stout and Dopplebock are extremely wonderful but the American Bock is not good. i believe it was due to less than ideal LME. The wonderful part is that I can give the not so good stuff away! Currently in secondary...
