    We're going to be in Asheville for 3 days next week. What the best 4 or 5 beer places to hit? There's a bunch near our hotel, but I want to make sure that I don't miss something great, or waste time at a mediocre pub.

    I am a huge fan of the Choklat and Backburner. I've got a few bottles of some other things (Heavyweizen, Big Red) but I haven't tried them yet. I think their stuff can be expensive, but I love it.

    Sweet Stout question

    I was planning on brewing the Sweet Stout recipe in the Jan/Feb issue of BYO. The all-grain version of the recipe called for 8 pounds of UK pale ale malt, the extract version said to replace 7 pounds of the pale ale malt with .5 pounds of malt and some extract. So..... I bought 1.5 pounds...

    I e-mailed Linus, the owner, and this is what he told me. 70% pale 18% munich 10% corn 2% chocolate malt perle and saaz hops english ale yeast Now I need to figure out how to make this extract.

    Well, 3 hours after pitching the 05, I am experiencing normal activity. That does not appear to be a coincidence to me, though I realize that I cannot prove that. Maybe the truth is somewhere in the middle. Maybe the Notty works, but not as well as it ought to. That's possible, isn't it?

    Okay, it is fermenting, but very slowly. Since I am doing a big beer anyway (chocolate coffee stout, 1.076og) I decided to pitch another packet, since I thought I might have to anyway. Went with 05 this time.

    Not sure if I'm having this problem or not, but my fermentation is not showing the normal signs. Will do a hydrometer reading tomorrow AM to see if I need to be concerned.

    Barrelhouse brews, Cincinnati

    Barrelhouse has closed and sold all of their equipment. While you can still find some bottles at Party Source, they are sure to be soured, as nearly every bottle they've turned out for months has been infected. A once great brewery that just stopped caring.

    I love to listen to the latest indie rock while brewing, but I sure don't dress like those hipsters on the hipster site. And hipster bars DO serve the best beer!
