    My First Barley Wine Recipe

hmmm. I've never heard of anyone toping off in AG brewing before. I might have to try this on a small scale, like a 3 gallon batch. That must kill your OG though.

Not sure if carbing PSI info. is accurate

Thanks Yooper. I'm glad I asked cause it seemed really low. I used that calculator for other brews and they were right on. I dialed them up to 10 psi.

Not sure if carbing PSI info. is accurate

Hey guys. I have a Scottish Ale and Belgian IPA sitting in the fridge waiting to be carbed. So I went on Tastybrew.com to check for the accurate PSI to set on my regulator. According to them, both beers should be set to 4.5 PSI @ around 35F. Too me, that seems low. FYI, I am using the set it...

    My First Barley Wine Recipe

That's a good idea but my boil kettle isn't big enough to result in 5.5 gallons after a 2.5 hour boil. What I think I am going to do is scratch the 1 lb. of crystal 80 and replace it with 8 oz. of crystal 120 and scale down the special B to 8 oz . Hopefully that will still preserve a dark...

What do you think of my brewery name and slogan?

Hey guys. I have been thinking of names for my brewery for the past couple days and I think I have found a good one. Left Wing Brewing Co. "Liberating beer (or beer drinkers) since 2007." What do you guys think? FYI, the name has no political ties or bias, just meant to illustrate the...

    Is Sam Adams going downhill?

That's awesome. lol. Maybe I should have complained too. Anyways, Sam Adams has been extremely inconsistent the last few years IMO. Whether it Sam Adams' fault or their retailers, I won't be drinking Sam Adams again until they get their act together.

Start needed for washed dry yeast?

Well I figured that a starter wouldn't be necessary because so much yeast was reproduced during the primary fermentation, from which I am harvesting the yeast from. But I'll make s starter just to be safe. Thanks for your input guys!

    aging in kegs

Yea, you can secondary in a keg. People do it all the time. Now when it comes to aging, chilled and carbed beer will age, but it just takes a longer. Bottles beers age in the bottle after it gets carbed, so the same works for kegs. I would age it in a keg at room temp. till the 22nd or 23rd and...

Start needed for washed dry yeast?

Hey guys. I am washing some Safale-US 05 yeast today from my APA (My LHBS charges $4 a pop). My question is, when I use a jar of the washed yeast, do I need to make a starter? I know with most dry yeasts, you don't need a starter. Does that apply to washed dry yeast as well? Also, I didn't...

    Is Sam Adams going downhill?

haha, not yet but I did I tivo it. That show is great! I'm going to be watching it tomorrow. Sam Adams Boston Lager was essentially my gateway beer into craft and micro beers. So back then I was pretty high on Sam Adams, but not anymore. To me, they are just a middle of the road brewery...

    Los Angeles Home Brew Stores?

Stein Fillers is great. It's in Long Beach. I live in Vegas, but my sister lives in LA. Every time she drives to Vegas to visit, I have her pick up a few sacks of grain for me from them (free shipping! lol). I save $25 per sack doing it this way. My LHBS in Vegas wants $60 for a sack of...

Does refrigeration stop the carbing process?

Yes, refrigerating beer kills the carbing process. That is why you have to make sure they bottles are fully carbed before sticking them in the fridge. how long have your bottles been carbonating? I usually crack a bottle open after 3 weeks to make sure they are fully corbonated before sticking...

    Is Sam Adams going downhill?

Ok. For the past 3 or 4 years Sam Adams Octoberfest was my favorite beer. Whenever that time of the year would come around, I would stock up on their Octoberfest at Costco, and I am talking like 4 or 5 cases. Then I started with home brewing. When it came out last year, it wasn't as good as...

    adding chocolate

I usually just take some cocoa power and mix it with water to make a paste. Then I just add it to the boil with 10 min. left. It gives a nice chocolate aroma and chocolate flavor. Also I don't know if you have it on your grain bill, but you can add a little chocolate malt to your mash.
