    You didn't happen to take any gravity readings of the starter wort before you pitched?

    How warm was the yeast compared to the starter when you pitched. They should be within a few degrees of eachother. There should also be a recomended pitching temp. for the particular yeast.

    Apple seeds, cherry seeds, plums pits, and peach pits contain cyanogenic acid (cyanide). Avoid jucing your apple seeds. Berry seeds are not poisonous and are quite good for you. I'm not shure of the flavor contributions of pulverized berry seed however.

    Can your current heat source bring 20 gal to a boil in a resonable amount of time?

    I would start with RO(Reversed Osmosis) water and make your adjustments from scratch. RO water may be expensive and hard to find. Otherwise just run your current water source trough activated carbon and don't risk any adjustments on insufficent data.

    Rye malt LME

    Rye has an oiliness taht can become extreme when usted in high quanitities. It can cause problems in mashing and lautering when used in quantities greater than 20 percent of the total bill. Pilsner malt has more diastatic power than Carapils and would probably serve better as your base malt.

    It really depends on the variety. Some keep better than others. If the hops were packaged fresh and have been kept frozen in a vacuum seald bag, they should have a pretty good chance. Make a tea out of a small amount and if tastes good use them. Any stale or skunky smells/tastes should be...
