Cider, Yeast Cake, Pectic Enzyme, Nutrients

The cider turned out great. A bready, semi-sweet, "This is what a farmhouse cider that you'd get from Grandpaw should taste like" cider. FG was 1.014, if I recall. Dangerous, though- Beer-enough like to drink by the liter, and wine-enough like to ninja you to the floor when you try to stand up...

Did you ever put a big beer on a yeast cake?

Pitching onto the young [primary] cake of a prior 1.050 ale. I racked the first beer off the primary cake on day 6, and then put the big stout on the cake.

Cider, Yeast Cake, Pectic Enzyme, Nutrients

After more "pitch on cake" research, I poured off the cake, and used a cup and a half of the slurry to inoculate this cider batch. I didn't measure OG, but with the above described contents, I would estimate a 1.060 OG. It was bubbling constantly for the first four days, and has almost...

Did you ever put a big beer on a yeast cake?

Well, I measured the OG on the Stout, and it came to 1.090. I sissied out, and I pitched on the entire cake, anyway, not having brewed a beer this large before. If nothing else, this will at least give a basis for full attenuation potential for a beer this large, and for how many esters are (or...

Did you ever put a big beer on a yeast cake?

Thanks for the feedback, guys- I am heartened by your reports of great results. For the past week I have been in a debate with myself over whether to pour out a part of the cake, or to pitch on the whole thing. I read all ob Bob's sticky "Why not to pitch on your yeast cake", and he makes very...

Did you ever put a big beer on a yeast cake?

Fellow brewers, I have a WLP 013 yeast cake from a spiced brown ale (OG 1.050). I plan on pitching a "big" stout on it. My question(s): 1: Speaking OG, how small is too small (1.060?) and how big is too big (1.150!?!?) 2: How would you scale a standard BJCP recipe to a...

Cider, Yeast Cake, Pectic Enzyme, Nutrients

Brewers, Bottom line: I plan to put apple juice on a yeast cake, and I have three questions, regarding: pectic enzyme, juice OG, and yeast nutrition. I have a 1.050 OG spiced brown ale on its third day in primary. The WLP 013 (London Ale) fermented very violently (half of a 5L [1.035]...

CPVC Manifold Build: Coleman Xtreme 70 Qt.

Nova, I agree about not gluing (at least for right now). Those fans of gluing CPVC will all tell their horror story about mid-mash manifold deconstruction after a gentle mash stir. I have already done a water half fill and leak test (mainly to test the bulkhead fitting- it leaked, and...

CPVC Manifold Build: Coleman Xtreme 70 Qt.

Fellow Brewers, Bottom Line Up Front: Here is a CPVC Manifold design option that I have not found anywhere else for a frequently used cooler for mash tuns: the Coleman 70 Quart Extreme Cooler. (Purchased Online [LHBS does not stock them] for approximately ~$40.00) First, this manifold...

    First Cider: Experiment: GREAT!

UPDATE: The first, "cold crashed" cider carbed under ~12-15 psi for 7 days. First Sample, a week later, lost most of its "apricot-y" character, and was now more "sweet and sour apple" flavored. Also notable was a mild bready-fermentation note, as well as a good yeast plug from the keg dip...
