    Anyone try BRY-97 yet

    I rehydrated this in a corn sugar solution @ 80F for 4 hours and pitched into a Fat Tire clone Saturday evening at 68F. Had a nice foamy head on my beaker when I pitched. Had activity by mid day Sunday, so no significant lag here.

    Fermenter lid blew off

    I did an imperial IPA about 2 months ago that blew the top off. Sampled one yesterday and it's delicious. You'll be fine. If it was fermenting vigorously there's little chance that anything nasty can take hold.

    Makes sense. I've actually had a bottle of Two Hands Brilliant Disguise (Moscoto style, but different grapes) blow it's cork in the summer. Thing scared the crap out of me. It was about 3am and it shot out of the wine rack halfway across the room!

    I don't think it makes any difference if you were doing a late extract. If you were adding all the extract up front anyway then it should increase your utilization some since you're diluting the extract into a larger volume of water than you normally could.

    I suggest you read your link....this has absolutely nothing to do with atmospheric CO2. You are talking about a lake where the temperature gradient changed enough to allow CO2 to release from solution.....
