I've never used Fermcap but I've heard a lot of folks give it a big thumbs up with no effect on head. It settles out in the primary.

You'll be fine, just remember it's going to be flat and young. There will be a layer of CO2 blanketing the top. After talking a sample out, knock on the sides a little bit to bring some more CO2 out of solution and you will "replace" the CO2 blanket quickly.

+1. No harm done, and split the extract like Tipsy said. Heck I've boiled just plain hops for an hour and added the extract at the end, but that can lead to a "vegetable" or "grassy" flavor I'm told. Didn't hurt my "Cascading Wheat IPA" though.

Definitely replace your siphon hose, I've heard of lots of "mysterious" infections batch after batch that came down to the hose. They're so cheap, when in doubt, throw it out.

You can pick up a diet scale at Wally world or Kmart really cheap, these kind: http://www.mdhb.com/popup_image.php?pID=3160 They usually have a little calibration dial on them too for using with or without the plastic tray. I got the smaller type, weighs up to a pound and is pretty accurate.

If you wanna use a liquid, there are many ways you can go with this. I'd try Wyeast 1056 or White Labs 001. It's very clean and generally won't impart any added flavors unless you ferment at a much higher temp. But given this is really an experimental batch and not a true to style DB, use...

Sorry, didn't notice you were using LME (was thinking DME). OG around 1.086, 6.25 liter starter (or 1.65 gallons). Mr Malty says 3 11.5 gram packs of dry or 7 packs of 5gram packs.
