    Any american citrusy hop goes well with Simcoe but I've made a American/UK hybrid IPA that blended Fuggles, Northern Brewer, Simcoe and Cascade hops and it was very very tasty.

    I would consider bleach bombing (few hour soak in bleach solution, i forget the concentration) it if it's plastic or glass, that'll guarantee everything is dead and won't give you the same problems anti-bacterial soap can.

    They would only break if you crammed them tightly side by side but if they are just touching you should be fine.

    Yea i do the same as you only I give it a slight whirl when I am about halfway through racking and once again before I start bottling. Although I once used a 5gal carboy to bottle and didn't really stir it at all and still got consistent carbonation so I dunno.

    I have a case of 8oz Coca Cola bottles that I use for tasting bottles with my barley wine. They work great and the glass is thick as hell. They don't produce them anymore and I believe they are somewhat collectible now so I dunno how viable that is as small bottles.

    If you are trying to add IBU then dry hopping won't do that for you. You'll need to boil a hop tea and add that to your beer. That can be calculated using beersmith.

    Yea if you aren't getting good carbonation, you need to either increase your priming sugar amounts or just let them sit longer in bottles (most likely the later). Doing what you are doing is a good way to paint your walls with beer.
